There is not much in my life that makes me feel like a grownup. I have avoided growing up assiduously.
But you know what makes me feel grownup?
Making a good meal that is a good for us.
Tasty is always good.
But a lot of non-grownup food is tasty.
And easy is always appreciated.
But again, what is easier than a PB&J?
So what is a grownup meal?
I made this before, and I don’t know if I posted about it – but if I did, tough, here it is again:
BAKED ITALIAN CHICKEN PAN DINNER
1# boneless skinless chicken breasts, cut into strips
10 oz package frozen broccoli
4 medium potatoes, diced (I cut small potatoes into reasonably sized wedges)
¼ C melted butter
.7 oz envelope Italian dressing mix
Preheat 350 º; spray cookie sheet with PAM
Spread chicken, broccoli, and potatoes onto cookie sheet. Drizzle melted butter over the ingredients and then sprinkle with Italian dressing mix. Bake 45-60 minutes.
And that’s it.
And it’s delicious.
It’s easy.
And it’s good for you!
(Oh, and unlike many grown-uppish meals, the clean up is minimal.)
What’s not to love?
So pleased with grownup me! Back to being childish petulant me tomorrow!
