THIS FAT OLD LADY’S WHAT YOU GOT COOKING TUESDAY – TAQUITO CASSEROLE

One of my favorites.  Easy, tasty, and the leftovers are great too.

BEEF TAQUITO CASSEROLE

10 oz bag frozen rice (1 ½ C cooked rice)

12 oz bag frozen corn

15 oz can black beans, drained, rinsed

1 oz env taco seasoning mix

10 oz mild enchilada sauce

2 C finely shredded Mexican cheese blend

20 oz box frozen taquitos

Preheat 375 º; grease 13×9 glass baking dish

            Cook rice as directed on bag.

            In large bowl, stir cooked rice, frozen corn, beans, taco seasoning mix, enchilada sauce and 1 ½ C cheese until well blended; transfer to baking dish.

            Top mixture with taquitos.  Bake 35 minutes; top with remaining cheese and bake for an additional 5-10 minutes until cheese is melted and taquitos are heated through.
