THIS FAT OLD LADY’S ME MONDAY – SO EASY AND SO DELICIOUS

No, I’m not talking about me – at least, not any longer. My easy and delicious days are far behind me.

Dinner tonight was a new recipe; and it is going immediately into my “Rotation Recipe” file. 

This was so easy, so delicious, and is a one-pan meal.  (And the whole thing takes less than 20 minutes from start to finish.)

BEEF WITH CABBAGE AND CARROTS
1 # ground beef
4 C shredded cabbage
1 ½ C shredded carrot
1 env onion soup mix
2 T water
salt and pepper to taste
  Brown ground beef in large skillet; drain.  Reduce heat to low.  Stir in cabbage, carrot and onion soup mix and water.  Cook 10 minutes or until vegetables are tender, stirring occasionally.  Add extra water (1 T at a time) for extra moistness if desired.  Salt and pepper to taste.

I put in a little more water (about ¼ C) and after it was done simmering, there was no excess fluid left – but the veggies and meat were nice and moist.  I used a bag of very fine shredded cabbage, and a couple of handfuls from a bag of shredded carrots.  It didn’t need any other seasoning than the onion soup mix either.  Just cook the meat, put in the carrots, cabbage, sprinkle on onion soup mix and dribble the water over the whole thing; cover and simmer for 10 minutes on low. 

And I love a meal that uses just one pan.  No sides of veggies necessary.  No need for pasta or rice to go with this – it’s fine without anything like that.
