THIS FAT OLD LADY’S WHAT YOU COOKING TUESDAY – IMPOSSIBLE PIE

I used to be the Bisquick Queen, lo these many years ago; and then I got away from it.  However, I came across a recipe for Impossible Chicken and Broccoli Pie.

Okay then.

Time to dust off my Bisquick crown.

The theory of Bisquick impossible pies is that you put all your fillings in your pie tin, and then you mix Bisquick, egg and milk and pour it over the top of the filling.  During baking, you get a nice thin tasty crust on the bottom of the pie. 

I really liked this one.  The layers are all good and the flavors are great together – and if you do like I did, and buy pre-cooked shredded chicken, it is super easy too. And you know, I’m all about the easy.

All bow to the (Bisquick) Queen!

IMPOSSIBLY EASY CHICKEN AND BROCCOLI PIE
2 C frozen broccoli cuts, thawed & drained
1 ½ C shredded Cheddar cheese
1 C cooked chicken cut up OR 2 (5 oz ea) cans chunk chicken well drained
1 medium onion, chopped
1/2 C Bisquick
1 C milk
1/2 t salt
1/4 t pepper
2 eggs
Preheat 400 º, PAM 9-inch glass pie plate                
Sprinkle broccoli, 1 C of cheese, chicken and onion in pie plate.                
In medium bowl, stir remaining ingredients with wire whisk or fork until well blended.  Pour into pie plate.                
Bake 35-38 minutes or until knife inserted in center comes out clean.  Sprinkle with remaining cheese.  Bake 1-2 minutes longer or until cheese is melted.  Let stand 5 minutes before serving.
