We don’t diet in our house. (We know diets don’t work.)
However, we do try to make healthy choices.
So, I was pleased to try riced cauliflower – which I like pretty well as a substitute for white rice.
Then there’s cauliflower mash – which is supposed to be a substitute for mashed potatoes.
And it could work. You put stuff on your mashed potatoes, so the underlying flavor isn’t that important, plus I like the flavor of cauliflower anyway.
Here’s the problem.
Mashed cauliflower (or potatoes or sweet potatoes – or pretty much anything) shouldn’t be so thin and runny that you can’t serve it with a slotted spoon.
Seriously. This is not a mash – this is slightly thickened soup.
And the kind I tried is even the “New thicker recipe” version – what was it before? Cloudy water?
And yes, I did follow the instructions.
