I am a firm believer that breakfast for dinner is a-okay.
I also have never been able to make an omelet.
Okay, truth – I’ve never actually tried. Just looking at how it is done is enough for me to know this is something that I don’t need to try.
But I found a recipe for a baked Denver omelet!
I love recipes that lets me take something I cannot cook properly and just let the oven do the work – like oven baked grilled cheese sandwiches, oven baked steak, oven baked hamburgers.
I just am not very good at frying things – it always ends up raw or burned to a crisp.
So yay for Baked Denver Omelet!
BAKED DENVER OMELET
2 T butter
½ onion, chopped
½ green bell pepper, chopped
1 C chopped cooked ham
8 eggs
¼ C milk
½ C shredded Cheddar cheese
Salt and pepper to taste
Preheat 400 º, grease 10-inch round baking dish
Melt butter in large skillet over medium heat; cook and stir onion and bell pepper until softened (about 5 minutes). Stir in ham and continue cooking until heated through (5 minutes more).
Beat eggs and milk in a large bowl. Stir in Cheddar cheese and ham mixture; season to taste. Pour mixture into prepared baking dish. Bake until eggs are browned and puffy (about 30 minutes). Serve warm
And I did it even easier. My grocery store sells fresh pico de gallo; so I got one of those and dumped it in with the eggs, instead of cutting up and cooking up the onions and bell pepper. Plus, everybody knows a Denver omelet is supposed to have tomato.
It came out beautifully and it was delicious. An easy, light dinner (or breakfast, or lunch or whenever the fuck you feel like eating it).
