I’ve had a hankering lately for a kind of cookie.
For the life of me, I cannot remember where I first had them or made them.
I am sure I have made them, and I damn well know I have eaten them.
And when I ran across a recipe, I knew I had to make them.
No-Bake Chocolate Peanut Butter Oatmeal cookies.
(Yeah, I know that’s not what the recipe says, but I have my priorities when it comes to cookies and I stand by my name these cookies.)
Remember them?
They are pretty easy to make.
And they are so fucking good.
Okay, they look like a cow flop.
But they are so fucking good.
Side note, in getting ready to make these, I kept forgetting that I had enough peanut butter in the house.
I ended up with three jars of peanut butter.
But happily, I was simultaneously using 2 of those 3 jars. (I like PBJ sandwiches for lunch.)
And when I made the cookies, I used up both of the 2 open jars.
When I explained this to my husband he simply shook his head.
Folks, this is why you want to get that ring on your finger.
Otherwise, he could have just run away screaming from this fat old lady.
Okay, back to our regularly scheduled blog about cookies.
I can’t remember – did I make them at home, at Girl Scout’s, in Home Ec?
You would think I would remember my first encounter with something that looks so disgusting but tastes so good.
Somehow my husband has lived his life without encountering these, but he agrees.
They are so fucking good.
RECIPE:
NO BAKE PEANUT BUTTER CHOCOLATE OATMEAL COOKIES | |
½ C butter
2 C sugar ½ C milk 4 T cocoa |
1 C creamy peanut butter
3 C instant oats 2 t vanilla |
In medium saucepan, add butter, sugar, milk, and cocoa. Place on medium heat.
While waiting for mixture to boil, measure out peanut butter and oats, and have vanilla handy. Bring mixture in pan to a rolling boil. Once it is at a full boil, boil for 1 minute and 15 seconds. Remove from heat immediately. Add peanut butter and stir. Add in the oats, and stir. Add vanilla and stir. Drop by tablespoons onto baking sheets lined with wax paper. Let cool 30 minutes or until set. |
I love these! It’s like a cookie and a candy all in one! 🙂
